Pupusas with Nadia and Guille
One of the things you can't miss when you go to El Salvador

Pupusas are an emblem of El Salvador and are a world unto themselves. Everyone has their own opinions about them and their own ways of choosing and eating them.
Nadia Erostarbe and Guille Gutiérrez are big fans of pupusas, frequent visitors to El Salvador, and are already experts in them.
One of the characteristics of both is that they are vegan and therefore choose vegan and pupusas allow them to respect their choice.
Guille likes to send them fresh out of the oven, piping hot, because he says they're not that hot inside (the author of the article disagrees. He says he wants to eat 10 at once, but they have to cool down a bit).
It's worth mentioning, as it came up during the writing of this article, that according to Wikipedia: “It is generally thought that ‘pupusa’ comes from the Pipil or Nahuat language. Nahuat is an endangered language, spoken by the Pipil indigenous community in western El Salvador. The truth is, its etymology is not known for certain.”
Some publications also indicate that the word is of Nahuatl origin, *puxahua*, meaning 'soft or spongy thing'; this is stated in the Dictionary of Americanisms of the Association of Spanish Language Academies. Alternatively, it may be from Nahuatl or Pipil, *pupusawa* or *pupushaua*. Furthermore, there are theories that trace the term *pupusa* back to Nahuatl. It is worth remembering that Nahuatl and Nahuatl are two related but distinct languages, and that Nahuatl is spoken in central Mexico.
Ultimately, like many things, their origin is not entirely clear, but one thing is very clear: They are very delicious and are a favorite of everyone who visits El Salvador.
